Below you will find our dinner plans for the upcoming week, complete with linked recipes to help you cook at home more easily. Pick your faves, make a grocery list and let’s get cooking!

This week we’re getting some Fall vibes with the Pot Pie Chicken recipe. I haven’t made this one in a while! It’s so easy and macro-friendly!!

FRIDAY – Fried pork chops with roasted eggplant (No specific recipe for this one, so here’s the details – I use Pork Panko to batter thin-cut pork chops and fry them in avocado oil. Eggplant is diced into large chunks, drizzle with olive oil and seasoned with salt, pepper, Italian seasoning – then spread on a sheet pan and roast at 425 for about 20 minutes. Add some mozzarella cheese at the end to melt.)

SATURDAY – Grilled steaks (probably New York Strips) with Roasted Brussels Sprouts

SUNDAY – Grilled burgers with Baked Fries

MONDAY – Parmesan Halibut with roasted Yukon Gold potatoes and orange bell pepper

TUESDAY – Balsamic Chicken with Bacon-wrapped Stuffed Asparagus

WEDNESDAY – Pot Pie Chicken

THURSDAY – Sheet Pan Sausage
