Looking for that perfect EASY weeknight dinner when you’re craving Italian food? LAZY LASAGNA IS FOR YOU! It tastes just like lasagna, without taking hours to build and bake a monstrosity. This dish only takes about 15 minutes to whip it up, so it’s one of our go-to dishes when we’re in a time crunch. And it’s KETO-FRIENDLY!
Yields 4 generous servings
1.5 lbs bulk Italian sausage
1/2 cup pizza sauce (We use Muir Glen Organic.)
1 cup shredded mozzarella cheese
1/2 cup ricotta cheese
1 tbsp oregano
- Heat pan and brown the Italian sausage until no longer pink. Break the meat up into chunks as it cooks.
- Add pizza sauce and stir.
- Add the mozzarella and ricotta and continuously stir as the cheese melts. Reduce heat to low and stir about 3 minutes until it is melted and combined.
- Serve over pasta, sautéed veggies, zoodles or just by itself!
(We usually serve over ZUCCHINI ZOODLES, but it would be great on spaghetti squash or gluten-free pasta. Also, it’s perfect for leftovers!)
