LAZY LASAGNA

Looking for that perfect EASY weeknight dinner when you’re craving Italian food?  LAZY LASAGNA IS FOR YOU!  It tastes just like lasagna, without taking hours to build and bake a monstrosity.  This dish only takes about 15 minutes to whip it up, so it’s one of our go-to dishes when we’re in a time crunch.  And it’s KETO-FRIENDLY!

Yields 4 generous servings

Ingredients:

1.5 lbs bulk Italian sausage

1/2 cup pizza sauce (We use Muir Glen Organic.)

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 tbsp oregano

Instructions:

  1. Heat pan and brown the Italian sausage until no longer pink.  Break the meat up into chunks as it cooks.
  2. Add pizza sauce and stir.
  3. Add the mozzarella and ricotta and continuously stir as the cheese melts.  Reduce heat to low and stir about 3 minutes until it is melted and combined.
  4. Serve over pasta, sautéed veggies, zoodles or just by itself!

(We usually serve over ZUCCHINI ZOODLES, but it would be great on spaghetti squash or gluten-free pasta.  Also, it’s perfect for leftovers!)
