SAUSAGE & ORZO SKILLET

Orzo is the best way to elevate a weeknight dinner. It’s fast and easy – no boiling water to wait on! Add this simple meal to your busy week. You will not be disappointed!  ENJOY!

Yields 4 servings

Ingredients:

  • 12-14 oz. Smoked Sausage (sliced into coins about 1/4 inch thick)
  • 3/4 cup orzo pasta
  • 1 1/2 cups chicken broth
  • 1 small head of broccoli florets (cut into individual florets of your preference)
  • 1/3 cup parmesan cheese
  • Olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/4 tsp red pepper flakes
  • Salt & pepper
  • Juice of 1/2 small lemon
  • Dried or fresh parsley (optional)

Directions:

  1. Heat olive oil in a large sauté pan.
  2. Add orzo and toast lightly for about 2 minutes.
  3. Sprinkle orzo with garlic powder, paprika, oregano, red pepper flakes, salt & pepper. Stir to combine.
  4. Add chicken broth. Stir well and bring to a simmer.
  5. Add broccoli. Cover and cook for 8 minutes, stirring occasionally.
  6. Add sausage. Cover and cook for 8 minutes, stirring occasionally.
  7. Stir in parmesan cheese until melted.
  8. Squeeze 1/2 lemon and stir.
  9. Sprinkle the top with a little parsley and extra cheese if you’d like. ENJOY!
