Orzo is the best way to elevate a weeknight dinner. It’s fast and easy – no boiling water to wait on! Add this simple meal to your busy week. You will not be disappointed! ENJOY!
Yields 4 servings
Ingredients:
- 12-14 oz. Smoked Sausage (sliced into coins about 1/4 inch thick)
- 3/4 cup orzo pasta
- 1 1/2 cups chicken broth
- 1 small head of broccoli florets (cut into individual florets of your preference)
- 1/3 cup parmesan cheese
- Olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp oregano
- 1/4 tsp red pepper flakes
- Salt & pepper
- Juice of 1/2 small lemon
- Dried or fresh parsley (optional)
Directions:
- Heat olive oil in a large sauté pan.
- Add orzo and toast lightly for about 2 minutes.
- Sprinkle orzo with garlic powder, paprika, oregano, red pepper flakes, salt & pepper. Stir to combine.
- Add chicken broth. Stir well and bring to a simmer.
- Add broccoli. Cover and cook for 8 minutes, stirring occasionally.
- Add sausage. Cover and cook for 8 minutes, stirring occasionally.
- Stir in parmesan cheese until melted.
- Squeeze 1/2 lemon and stir.
- Sprinkle the top with a little parsley and extra cheese if you’d like. ENJOY!
