Broccoli that’s delicious – THAT’S RIGHT! Listen to me when I tell you that this recipe is LIFE-CHANGING. It’s low-carb, keto-friendly…and most of all, it gets you to eat your veggies! Definitely worth the 30 minutes it takes to bake in the oven. ENJOY!
Yields 4 servings
Ingredients:
1 lb frozen broccoli florets (thawed in the fridge overnight)
1/4 cup sour cream
1/4 cup heavy whipping cream
1/4 tsp garlic powder
1/2 cup shredded cheddar cheese
Salt & pepper
Instructions:
- Preheat oven to 350 degrees and prepare a 13×9 baking dish with non-stick spray.
- In a large mixing bowl, whisk together the sour cream, heavy whipping cream, garlic powder and a little salt & pepper (to taste).
- Add thawed broccoli florets and stir to combine throughly.
- Add 1/4 cup of the shredded cheddar cheese to the bowl and combine throughly.
- Pour broccoli mixture into the baking dish and distribute evenly.
- Top with remaining cheese (…and some extra black pepper, if you are like me!)
- Bake at 350 degrees for 30 minutes and ENJOY!
Prepare to be amazed by your family going back for a 2nd helpings of veggies!
