BAKED FRIED CHICKEN

Make fried chicken a little more calorie friendly by ditching the grease! It’s so easy for a busy weeknight. You’ll be glad you put this dish in your weekly rotation. ENJOY!

Yields 2-3 servings

Ingredients:

  • 1 lb. boneless, skinless chicken thighs
  • 1/2 cup plain dried bread crumbs
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons cornmeal
  • 1/2 teaspoon crushed red pepper (or more if you like)
  • 2 eggs
  • Salt & pepper

Directions:

  1. Preheat oven to 425 degrees.
  2. Spray a 13×9 baking dish with non-stick spray.
  3. In a pie plate, mix bread crumbs, cheese, cornmeal, crushed red pepper and salt & pepper to taste.
  4. In a bowl, beat eggs.
  5. Dip each piece of chicken in egg mixture, then coat with bread crumb mixture generously on all sides. Place in baking dish.
  6. Bake @ 425 for 25 minutes, turning chicken halfway through the cooking time.
