Make fried chicken a little more calorie friendly by ditching the grease! It’s so easy for a busy weeknight. You’ll be glad you put this dish in your weekly rotation. ENJOY!
Yields 2-3 servings
Ingredients:
- 1 lb. boneless, skinless chicken thighs
- 1/2 cup plain dried bread crumbs
- 1/4 cup grated parmesan cheese
- 2 tablespoons cornmeal
- 1/2 teaspoon crushed red pepper (or more if you like)
- 2 eggs
- Salt & pepper
Directions:
- Preheat oven to 425 degrees.
- Spray a 13×9 baking dish with non-stick spray.
- In a pie plate, mix bread crumbs, cheese, cornmeal, crushed red pepper and salt & pepper to taste.
- In a bowl, beat eggs.
- Dip each piece of chicken in egg mixture, then coat with bread crumb mixture generously on all sides. Place in baking dish.
- Bake @ 425 for 25 minutes, turning chicken halfway through the cooking time.
