Simple and delicious is the only way to describe this fish dish. Add it to your meal plan immediately! It’s so versatile – pair it with any veggie side, pasta, potatoes, whichever you like! The best part is that it requires absolutely no master chef skills. ENJOY!
Yields 2 servings
Ingredients:
- 3/4 lb. salmon filet, skinned
- juice of 1/2 lemon (about 1 tablespoon)
- 3 tablespoons (divided) garlic compound butter (I use Kerrygold Garlic & Herb)
- salt & pepper
- 1/2 teaspoon dried rosemary
- 3 lemon slices (optional)
Directions:
- Preheat oven to 425 degrees.
- Line a baking sheet with parchment paper or spray a baking dish with non-stick spray.
- Sprinkle the skinned side of the filet with salt & pepper. Place skinned side down on the baking sheet or dish.
- Pour lemon juice over the top of the filet.
- Sprinkle dried rosemary over the top of the filet.
- Bake for 15 minutes.
- Remove fish from oven. Place 3 pats of butter across the filet. OPTIONAL-Place lemon slices on top of butter. Butter will melt down the sides as it finishes cooking.
- Bake for 5 minutes or until fish is cooked to your liking.
