GARLIC BUTTER SALMON

Simple and delicious is the only way to describe this fish dish. Add it to your meal plan immediately! It’s so versatile – pair it with any veggie side, pasta, potatoes, whichever you like! The best part is that it requires absolutely no master chef skills. ENJOY!

Yields 2 servings

Ingredients:

  • 3/4 lb. salmon filet, skinned
  • juice of 1/2 lemon (about 1 tablespoon)
  • 3 tablespoons (divided) garlic compound butter (I use Kerrygold Garlic & Herb)
  • salt & pepper
  • 1/2 teaspoon dried rosemary
  • 3 lemon slices (optional)

Directions:

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with parchment paper or spray a baking dish with non-stick spray.
  3. Sprinkle the skinned side of the filet with salt & pepper. Place skinned side down on the baking sheet or dish.
  4. Pour lemon juice over the top of the filet.
  5. Sprinkle dried rosemary over the top of the filet.
  6. Bake for 15 minutes.
  7. Remove fish from oven. Place 3 pats of butter across the filet. OPTIONAL-Place lemon slices on top of butter. Butter will melt down the sides as it finishes cooking.
  8. Bake for 5 minutes or until fish is cooked to your liking.
