PARMESAN HALIBUT

If you’re looking for an easy fish dish to add to your meal plan, this is it! It’s so versatile – pair it with any veggie side, pasta, potatoes, whichever you like! Simple ingredients and no master chef skills are required. ENJOY!

Yields 2 servings

Ingredients:

  • 3/4 lb. halibut filet, skinned
  • juice of 1/2 lemon (about 1 tablespoon)
  • 3 tablespoons mayonnaise
  • 3 tablespoons shredded parmesan cheese
  • salt & pepper

Directions:

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with parchment paper or spray a baking dish with non-stick spray.
  3. Sprinkle the skinned side of the filet with salt & pepper. Place skinned side down on the baking sheet or dish.
  4. Pour lemon juice over the top of the filet.
  5. Bake for 15 minutes.
  6. While that bakes, mix the mayo and parmesan in a small bowl until well combined.
  7. Remove fish from oven. Spread mayo mixture on top of the fish covering the entire top of the filet. It will melt down the sides as it finishes cooking.
  8. Top with cracked black pepper.
  9. Bake for 5 minutes or until fish is cooked to your liking.
