CHEESY CAULIFLOWER

TRUST ME ON THIS – this recipe will be a game changer in your quest to eat more veggies! You just can’t go wrong with taco seasoning and cheese. AM I RIGHT??!! Quick, easy, low-carb, keto-friendly veggie perfection…ENJOY!

Yields 2-3 servings

Ingredients:

  • 1 head of cauliflower
  • taco seasoning (I use Flavor God Taco Tuesday)
  • salt & pepper
  • avocado oil spray or olive oil spray – your choice
  • shredded cheddar cheese

Directions:

  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with parchment paper.
  3. Cut cauliflower into florets and spread out on baking sheet.
  4. Spritz cauliflower with oil spray. Sprinkle with taco seasoning, salt & pepper to taste.
  5. Toss around with your hands to evenly distribute seasoning and oil.
  6. Bake for 20 minutes.
  7. Remove from oven. Carefully scoot all the cauliflower toward the center of the baking sheet. Cover with as much cheese as you like.
  8. Tent with aluminum foil.
  9. Bake for 20 minutes.
