TRUST ME ON THIS – this recipe will be a game changer in your quest to eat more veggies! You just can’t go wrong with taco seasoning and cheese. AM I RIGHT??!! Quick, easy, low-carb, keto-friendly veggie perfection…ENJOY!
Yields 2-3 servings
Ingredients:
- 1 head of cauliflower
- taco seasoning (I use Flavor God Taco Tuesday)
- salt & pepper
- avocado oil spray or olive oil spray – your choice
- shredded cheddar cheese
Directions:
- Preheat oven to 425 degrees.
- Line a baking sheet with parchment paper.
- Cut cauliflower into florets and spread out on baking sheet.
- Spritz cauliflower with oil spray. Sprinkle with taco seasoning, salt & pepper to taste.
- Toss around with your hands to evenly distribute seasoning and oil.
- Bake for 20 minutes.
- Remove from oven. Carefully scoot all the cauliflower toward the center of the baking sheet. Cover with as much cheese as you like.
- Tent with aluminum foil.
- Bake for 20 minutes.
