CABBAGE & SAUSAGE SKILLET

Cast iron is the way to go with this dish! Fry it up on the stove and bake up the cheesy goodness in the oven. It’s cabbage that you can get your entire family to eat!  ENJOY!

Yields 4 servings

Ingredients:

  • 1 small head of green cabbage, thinly sliced
  • 1 can fire-roasted tomatoes, strained of juices
  • 1 can sweet corn, strained of juices
  • 1/2 cup shredded cheddar jack cheese
  • 14 oz. Smoked Sausage (sliced into coins about 1/4 inch thick)
  • Olive oil
  • Cajun seasoning
  • Salt & pepper

Directions:

  1. Preheat oven to 500 degrees or BROIL.
  2. On the stove, heat up a cast iron skillet (or other oven-safe pan) and add olive oil, then the sliced cabbage. Sprinkle with Cajun seasoning and salt & pepper to taste. Cook until it starts to soften – about 10 minutes
  3. Add strained tomatoes and corn. Mix until combined. Cook about 10 minutes.
  4. Add the sliced sausage. Mix in and cook about 5 minutes.
  5. Turn off heat and sprinkle cheese on top.
  6. Bake at 500 degrees or BROIL for 5-10 minutes until the cheese is just the way you like it and ENJOY!
