SAUSAGE & BROCCOLI CASSEROLE

One pan is all you need to make this entire meal that your family will love. It’s low-carb, keto-friendly…and most of all, it gets you to eat your veggies!   Definitely worth the 30 minutes it takes to bake in the oven.  ENJOY!

Yields 4 servings

Ingredients:

  • 1 lb frozen broccoli florets (thawed in the fridge overnight)
  • 1/4 cup sour cream
  • 1/4 cup heavy whipping cream
  • 1/4 tsp garlic powder
  • 1/2 cup shredded cheddar cheese
  • Salt & pepper
  • 14 oz. Smoked Sausage (sliced into coins about 1/4 inch thick)

Directions:

  1. Preheat oven to 350 degrees and prepare a 13×9 baking dish with non-stick spray.
  2. In a large mixing bowl, whisk together the sour cream, heavy whipping cream, garlic powder and a little salt & pepper (to taste).
  3. Add thawed broccoli florets and stir to combine throughly.
  4. Add 1/4 cup of the shredded cheddar cheese and the sliced sausage to the bowl and combine throughly.
  5. Pour mixture into the baking dish and distribute evenly.
  6. Top with remaining cheese (…and some extra black pepper, if you are like me!)
  7. Bake at 350 degrees for 30 minutes and ENJOY!
