Is your newsfeed filled with posts about this thing called an INSTANT POT???
I had resisted the urge to join the craze, thinking that it was just a fad and it would pass. It wasn’t until my Butcher Box order arrived and it included some St. Louis style ribs that my mind got the better of me.
You see…I was searching on Pinterest for a recipe to cook those ribs over Labor Day
weekend. All of them said it took 4 hours + in the oven!!!
Who has 4 hours to cook anything or wants to spend 4 hours in the kitchen on their day off??? NO THANK YOU!
In my recipe search, there was a one that kept popping up using an Instant Pot. Hmmmmm it said…30 minutes to cook to perfection. Can this be true???
I had to find out for myself…so, I CAVED and immediately ran to Target and picked up the Instant Pot Duo 6 qt.!
Here’s how simple it was to cook…
- Pour in 1 cup of beer (I used Blue Moon) and 1/4 cup apple cider vinegar.
- Arrange the ribs standing up on the trivet inside the pot.
- Close the lid and the vent.
- Put the setting on high pressure for 30 minutes.
- Transfer ribs on to a cookie sheet and brush with your favorite BBQ sauce.
- Broil for a few minutes to sear in the sauce.
OMG – they were divine!!! Tender, juicy, falling off the bone!! 100% cooked to PERFECTION!!!
***I give the Instant Pot 2 thumbs up!!!***
